Leeds welcomed us with open arms. We now have some fantastic
customers who dine with us regularly and to whom we are very grateful.
In France a brasserie is a place to eat and drink, locally and informally
at a price that means you visit regularly. Often when you see the name
Raymond Blanc you think expensive, but that is not the case with
Brasserie Blanc. I always say that if Le Manoir is a delicate waltz then the
Brasseries are the cancan. It is not about refned haute cuisine but simple,
great quality food in a friendly, relaxed environment where you can have
good fun with family and friends.

I agree, Yorkshire has a wealth of excellent producers and I’ve been lucky
enough to meet some of them. We really rate Holme Farmed venison, we
also use Sykes House Farm near Wetherby and as for cheese I am a huge
fan of Mrs Bells Blue – magnifque!

When they are in season and on the menu our mussels are always very
popular. Our soufés are a big hit too, I think the people in Leeds like a bit
of good French comfort food.
